Old Fashion Potato Soup
Ingredients:
1/4 cup butter
1 large onion chopped
6 potatoes peeled and diced
3 cups water
2 tablespoons chicken bouillon
black pepper to taste
salt to taste
3 tablespoons flour
3 cups milk or you can use canned milk
2 carrots peeled and diced
1 tablespoon parsley
1/4 teaspoon dried thyme
Directions:
Melt butter in a saucepan over medium heat. Stir in onions; cook and stir until the onion has softened and turned translucent about 5 minutes.
Add the diced potatoes, carrots, and water cook until vegetables are tender (about 10 minutes) do not overcook. Season with the ground black pepper and salt to taste.
Add flour to a bit of the milk to make a paste. Gradually add the milk and chicken base and stir well. Cook over low heat stirring constantly until warmed through. Stir in parsley and thyme and serve hot.
Goes well with a loaf of homemade bread. You can also use the base recipe and add a couple cans of clams to make clam chowder. Another variation to this soup is you can add crisp fried and chopped bacon.
