Recipe Cupboard – Coconut Pie

Coconut Pie


3 large eggs, beaten

1 1/2 cups granulated sugar

1 cup unsweetened or sweetened flaked coconut

1/2 cup unsalted butter, melted

1 tablespoon white wine vinegar

1 teaspoon vanilla

pinch salt

1 9-inch pie crust


Preheat oven to 350 degrees

In a medium bow, mix all the filling ingredients until well combined; pour into the pie shell.

Place pie on a cookie sheet and bake for 1 hour.

Let set and cool completely before slicing.
