Recipe Cupboard – Italian Custard Pie

Italian Custard Pie


4 eggs slightly beaten

1/2 teaspoon salt

1/2 cup sugar

1/4 teaspoon nutmeg

1/4 teaspoon ground cinnamon

2 1/2 cups milk hot

1/2 teaspoon vanilla

dash of lemon zest

1  9-inch pie crust


Beat eggs well in a large bowl, then add milk, salt, sugar, nutmeg, cinnamon and vanilla

Pour mixture into a unbaked pie crust

Place dish on a foil lined cookie sheet

Bake on center rack in the oven at 450 degrees for 10 minutes.

Reduce oven temperature to 350 degrees and bake for 30 – 35 minutes more or until knife inserted comes out clean.

You also can add sweetened coconut flakes or shredded or toasted coconut.
